Bake Ahead, Breathe Easy: My 10-Day Freezer Plan for Stress-Free Coffee Mornings

I love hosting charity Coffee Mornings, but my last one fell right in the middle of a hectic week. School runs, work, and a house that never seemed quiet.

I still wanted a good bake table, though, so I tried a freezer plan. Ten days, a few pockets of spare time, and a clear list of what freezes well. It turned out to be the calmest Macmillan Coffee Morning I have ever hosted—cool, in every sense.

I shared the plan with a friend who had even less time than I did, and she followed the same steps with her own schedule. If you have a crowded week, young children, or very limited baking windows, this approach might help you breathe a bit easier, too.

Why freezing makes baking prep a breeze

When your baking time is limited, freezing takes the pressure off. You can bake when you can, whether that’s in the evening or on the weekend, clear up once, and store the results safely until your Coffee Morning day without having to keep a stressed eye on the oven timer.

The other benefit of freezing your bakes is financial. Spreading baking over several days lets you shop around for deals, bulk-buy ingredients, and reduce waste.

What freezes well in real home kitchens

Here are the bakes that I’ve found generally hold up reliably after freezing.

Great options

● Brownies

Old fashioned dandelion loaf cake with lemon drizzle

● Sponge layers (without frosting)

● Banana loaf

● Shortbread

● Chocolate traybakes

What to avoid freezing

● Anything with fresh cream (if you can, add this on the day of!)

● Fresh berries (they’ll defrost mushy)

● Meringue toppings

● Buttercream that hasn’t set firmly



My 10-day baking freezer plan

This is the schedule I use now in the lead-up to any events or fundraisers. Feel free to adjust it around your own days and bedtimes.

8-10 days before

Try to bake one traybake or loaf per evening (depending on how many you’re going for!). Let each cool fully, wrap tightly. Label with a date and allergen notes now.

5-7 days before

Bake brownies or lemon drizzle if serving: both freeze well. Make sure the lemon drizzle goes in once the syrup has soaked in and the top is dry.

4 days before

Prep sponge layers for layer cakes. Let them cool, and wrap them tightly. These stay flat and neat when frozen.

3 days before

Check how much space you’ve actually got left in the freezer! Make a short list of what is already made and whether you need to stock up on any fresh fillings or toppings.

2 days before

Take stock of allergies and make sure everything is labelled. Make one safe option if needed, such as a brownie without dairy or a cake made with gluten-free flour.

The day before

Move everything from the freezer to the fridge. This keeps the texture soft and prevents ice crystals from forming as the bakes slowly defrost and come to temperature.

The day of the Coffee Morning

Glaze, frost, and slice. Keep a small table of allergen cards ready, and get ready!

Mini disaster plan

Things go wrong in every kitchen, so don’t panic if freezing and defrosting don’t go perfectly to plan.

If a bake feels dry, warm a little syrup and brush it over the top. If a sponge sinks, level it and add a thicker filling.

I also keep a small tub of icing sugar nearby so I can mix a quick glaze if something looks dull after defrosting. And if a traybake breaks when cutting, I simply turn it into “taste testers” with a small donation pot beside it; they always go, and no one ever complains!

From Freezer to Fundraiser

I’d highly recommend using your freezer to your advantage to plan ahead for your next fundraiser. A freezer plan gives you predictable portions and less waste, and can hugely minimise any stress ahead of the day.

When prep feels manageable, you also enjoy the morning more. And trust me, people notice that. A relaxed host lifts the whole room and often lifts the donations too, which is what this is all about. Very cool, indeed.
