My boys are great eaters... until it comes to lunch and dinner that is. They will gobble up their breakfasts no problem, loving every piece of fruit I give them and always wanting more.
However, when it comes to lunch and dinner, it's as if they're entirely different children altogether, most of the time refusing to even try what I've made for them - my new hobby seems to be lovingly preparing meals and then scrapping them into the bin...
One fail safe recipe I've tried with them and which they can't get enough of is my Cheesy Chicken Quesedillas. These are the easiest, simplest and most delicious go-tos when I'm in search of something quick to make for the boys and which I know they will eat too.
Even Tyler's best friend loved these when I made them for him and his mother said he really wasn't keen on trying new foods at all! They really are too delicious to resist and so simple that anyone can make them.
I use Sacla Roasted Pepper Pesto for my quesedillas as I know the boys love the flavour but Sacla also have more delicious pesto flavours within their range that would be perfect for these too. Sacla's range of pestos are so versatile can be used in a variety of different meals and even in on the go snacks such as wraps, sandwiches and rolls for the kids when we're out and about.
What you need -
Tortilla wraps Chicken breasts cooked an chopped
Sacla Roasted Pepper Pesto
Grated cheddar cheese
Chopped peppers
Diced onions
Sunflower oil - for frying
How to make -
1. Mix the chopped chicken breasts in a bowl with the chopped peppers and diced onions.
2. Use a generous helping of Sacla Red Pepper Pesto (depending on your child's taste preferences) and mix together with the chicken and veg.
3. Pre-heat some sunflower oil in a pan.
4. Place the chicken, pesto and veg mixture on one side of a wrap.
5. Top with a generous helping of cheddar cheese.
6. Close the wrap on top of itself so it creates a half moon shape.
7. Fry each side of the wrap on the pan until it goes golden and the cheese has melted.
8. Cut into little triangles and serve.
9. Watch your kids enjoy their delicious and super simple dinner!
I love this fuss-free recipe. The kids love it, I don't have to spend too much time prepping and cooking food and seeing an empty plate after dinner time just fills me with joy - honestly, it's amazing the little things you'll find joy from as a parent!

These look delicious. I think Matthew might like these, not so sure about Chloe. But she doesn't eat anything I make her, yet eats all the food she can get in creche.
