Easter Sunday dinner... second only to Christmas dinner, yet just as delicious. This year, I've been looking for healthier alternatives to have alongside our usual roast turkey and stuffing, now that I'm on a serious healthier lifestyle kick.
Thankfully, I was able to find the perfect accompaniments to our 'healthy-alternative' roast dinner in the form of Strong Roots selection of delicious frozen vegetables. Strong Roots is an Irish food start-up who offer the most delicious selection of of frozen food and vegetables. Their mission is 'honesty in food from underground flavours' and they're bringing frozen food back from the dead by keeping it simple, tasty and delicious.
I was able to pick up the range from my local SuperValu store and chose the Oven Baked Sweet Potato, Roasted Beetroot Wedges and Garlic Roasted Sweet Potato to have with our roast - each bag was €3.99.
Stuffed Roast Turkey with Oven Baked Sweet Potato, Roasted Beetroot Wedges and Garlic Roasted Sweet Potato
Ingredients:
Turkey breasts
Sage and onion stuffing
Turkey stock
Turkey stock
Strong Roots Oven Baked Sweet Potato
Strong Roots Roasted Beetroot Wedges
Strong Roots Garlic Roasted Sweet Potato
Method:
1. Preheat oven to Gas Mark 5 and line a roasting tray with tin foil.
2. Cut a slice in the turkey breasts and stuff with the sage and onion stuffing. I bought pre-made stuffing but if you're looking to make everything from scratch you can always make your own.
3. Place the stuffed turkey breasts on the tinfoil covered roasting tray and cover lightly with extra tin foil.
4. Pour a cup of turkey stock on the bottom of your roasting tray and baste your turkey breasts all over every thirty minutes with the juices on the bottom of the pan.
5. Remove the tinfoil after 21/2 hours and continue to roast the turkey for a further hour.
6. On a lined baking tray place the Strong Roots Oven Baked Sweet Potato.
7. Place the Strong Roots Beetroot Wedges and Strong Roots Garlic Roasted Sweet Potato on a separate tray.
8. Once the stuff turkey breasts are roasted take them out and leave them to sit.
9. Turn the oven up to Gas Mark 6 and roast the vegetables for twenty minutes - or until desired colour.
10. Plate up alongside the stuffed turkey breasts and enjoy!
Not only did the food look vibrant and appetising on the plate, it tasted amazing too. Honestly, the flavour was just perfect and I couldn't get enough of the Oven Baked Sweet Potato - the crispiness on these out of the oven was just perfection!
Beetroot wasn't something I had ever tried before, but I'm happy to say I'll be having it again after trying Strong Roots Roasted Beetroot Wedges. They had such a great flavour and weren't earthy or sour - something which had put me off trying beetroot before, and it was great seeing the kids enjoying these too. The vibrancy of the pinky-purple beetroot with the bright orange of the sweet potato looked great too.
Frozen food is such a staple for us a family of four due to the convenience factor, but it can be hard to find the healthy offerings in amongst the highly processed stuff. Strong Roots, however, are really offering something good with their range and as a mother of two young boys, it's a brand that I would support in favour of cheaper, unhealthier alternatives.
I'll be picking up more of these delicious Strong Roots products in preparation for our Easter Sunday roast, along with their burger options for weekday dinners too.
It's nice to be able to stay on plan and eat healthy, but also be able to enjoy the same dinner as my family and have something that tastes amazing too.
If you're wanting to try a frozen food range that doesn't compromise on flavour then Strong Roots is definitely the brand to try. You won't be left disappointed - or hungry!

DeleteOh yum how brilliant is that! We’ve literally just had roast chicken with sweet potato and beetroot for dinner, just thinking how much quicker it would’ve been if it was frozen veg!!
