What Tyler Lee Eats - Sweetcorn Space Saucers | Recipe From Ella's Kitchen The Big Baking Book - The Yellow One ♥

 Tyler Lee loves the meals and snacks from Ella's Kitchen, in fact their smoothies are his favourite, but recently I've been looking for some new recipes to try out with him as I've made him practically everything from our other baby recipe book and I felt it was time to mix things up, try new flavours and introduce him to some new textures and foods. We recently got the new Ella's Kitchen The Big Baking Book - The Yellow One, a follow on from their first baking book The Red One. The Yellow One is packed full of healthy, mouth-watering recipes for little ones and adults alike to enjoy, which are categorised into sections such as lunches, family dinners, party time, etc. There really is a recipe for every occasion in this book. The book also feature stickers at the back which can be placed on the recipes or given to the child helping to encourage not just healthy eating but engagement in baking with their parents too. I think cooking is a life skill and Tyler Lee shall definitely be encouraged to help with baking/cooking meals with his daddy and I. I decided to start out by making him the Sweetcorn Space Saucers as they seemed quick and relatively easy to make and I had quite a few of the ingredients already that I wanted to use up. Also, this recipe included Cajun spice, something I had never given to Tyler Lee before and I wanted to give him a new flavour to explore.

For this recipe you will need -
50g of frozen sweetcorn
50g of plain wholemeal flour
25g of cornmeal
2 tablespoons of copped coriander
1/2 teaspoon of Cajun spice
1 egg, separated
75ml of whole milk

This recipe makes six saucers but I doubled this recipe as Jacek wanted to try these too, they sounded delicious. I also couldn't find any wholemeal flour in my local shop so I had to use white flour, hence why my saucers look slightly different from the saucers in the book. The method of this recipe is very easy to follow too.

1. Preheat the over to 190 degrees or Gas Mark 5. Line a baking sheet with parchment paper. Cook the sweetcorn in a saucepan of boiling water for three minutes and drain well. Place the flour, cornmeal, coriander and Cajun spice in a large bowl. 

 2. Add the sweetcorn, spring onions, egg yolk and milk to the mixture and mix to form a thick paste.

3. Whisk the egg white in a clean, grease-free bowl until it forms soft peaks.

 4. Gently fold in the sweetcorn mixture. Place six spoonfuls of the mixture on the parchment paper spaced well apart.

5. Bake the pancakes in the over for 8 minutes, using a spatula carefully turn them over and cook for a further 4 minutes. Serve warm and sprinkled with coriander.

 Tyler Lee loved his Sweetcorn Space Saucers and Jacek did too. I like that this was a meal that Tyler Lee was able to eat himself. He's not able to eat with cutlery yet so these were perfect for cutting into pieces for him to eat by himself. I'm also glad he liked the kick the Cajun spice gave to these saucers. These were a great tea-time treat on a Saturday evening and were so quick and easy to make. It's great that these can be made with basic ingredients but still be quite delicious!

  1. These are so healthy as they are baked I make a similar pancake but shallow fry them. must try baking them in future.
