I'm really into baking these days, I see it as part of being a mother, I want to be able to make delicious, sweet treats for my son from time to time when he is older and as my cooking skills are non-existent I decided I needed to get some practise in before he's able to eat all of these mouth watering things. I try to bake something at least once a month and recently I made a dessert which is one of my mother's specialities - white chocolate and blueberry cheesecake. This is a fantastic dessert for the summer months as the white chocolate texture of the cheesecake top is so delicious and the blueberries give that refreshing taste of fruit which almost everyone enjoys during glorious sunny days. I also think that this dessert would be fabulous with raspberries as the contrast between the sweet chocolate and the tart raspberry would be divine. We served this as one of the desserts at Tyler Lee's christening and everybody loved it. I've had people ask me for the recipe since that day. My friend told me when she thinks of this her mouth instantly waters! I've passed this recipe onto friends in Poland, Finland, Germany and England and they have all loved it too. Here is what my efforts came up with...
How to make this delicious dessert I hear you ask, well the great and funny thing is that it actually involves no baking at all! What could be better!
What you will need is -
200g (7oz) Plain digestive biscuits
100g (31/2oz) butter
400g (14oz) good-quality white chocolate, broken into pieces
250g (9oz) full-fat cream cheese
250ml (81/2fl oz) double cream
250g (9oz) mascarpone cheese
250g (9oz) blueberries

The method of the making -
1. Crush up the biscuits in a large bowl with a rolling pin or anything else you have at hand until the biscuits have become
crumbs.
2. Melt the butter in a large saucepan then add it to the biscuit crumbs and mix
to combine. Put the butter and biscuit mixture into the base of a
spring form tin and press down with the back of a spoon to create an even surface for your cheesecake topping.
3. Place the chocolate in a heatproof bowl and put it over a small
saucepan of barely simmering water to melt, stirring occasionally.
4. Whisk the cream cheese, cream and mascarpone in a large bowl with a
wooden spoon or place in a mixer (I used a Kenwood mixer) until well combined with no lumps present. Stir through the white chocolate and
lastly fold in the blueberries. Spread the mixture evenly over top of
the biscuit base, cover and place in the fridge for at least four hours.
5. Remove the cheesecake from the tin, serve and enjoy!
There you have it, so easy so it is a dessert which anyone can make. I highly recommend you try it but be warned, it is addictive!
