Butternut Squash & Chestnut Soup | Recipe ♥

I love trying out new recipes, I've shared some of my previous recipe attempts on the blog before and my baking creations too, so when I was asked if I'd like to try out a recipe from the new Sunrise Senior Living cookbook, a cookbook which contains their care home residents all-time favourite recipes and recipes from the chefs at Sunrise care homes, I gladly accepted.

I've previously worked with Sunrise Senior Living before, on their End Loneliness campaign, a campaign that was, and a cause that still is, very close to my heart. Back then I made their Paprika and Red Onion Chicken which was absolutely delicious, you can read all about it here. This time, the recipe which caught my eye from the newly released cookbook was the Butternut Squash and Chestnut Soup. There's nothing lovelier on a cold and blustery day than a nice, warming bowl of homemade soup. Jacek usually makes batches of homemade soup during the winter months but I can't recall us having any this year, so it was high time that we all enjoyed a bowl of wholesome soup for ourselves.

Butternut squash soup is one of my favourites anyway, but I've never had chestnuts as an ingredient in anything so I was intrigued to give it a try. The chestnuts were actually quite hard to find, I eventually found some in my local English Market, so just keep that in mind if you're wanting to make the recipe for yourself.

I was delighted with out the soup turned out, I've never actually made my own soup before. As I said, Jacek is the soup maker of the house, but it came out great and was really delicious - the Sunrise recipes never seem to fall flat when it comes to the taste testing! Even Tyler Lee enjoyed a bowl and that's saying a lot considering he's a very fussy eater.

This was the perfect warming and wholesome meal for us all to enjoy and was particularly lovely with some soda bread with lots of butter for dipping.

  3. I have made a butternut squash soup today and wish I had seen this recipe before making it. i am going to try this one out next time I make the butternut squash. You pictures make it look sooooo yummy to. I love homemade soups they are the best. x

  4. I worked on the end loneliness campaign too, such a great thing to be a part of! This looks amazing, butternut squash soup is a favourite of mine but I've never tried making it xx
