I was baking again! This time I thought I'd make some treats for my grandparents and parents and came up with this red velvet cupcakes topped with vanilla icing, sprinkled with sugared butterflies, adorned with wafer daisies and chocolate stars. I think these cupcakes turned out looking perfect for Easter! I think I'll have to make something more Halloween-like next week. Until then feast your eyes on these beauties, I can assure you that they tasted as beautiful as they look!
To make these gorgeous red velvet cupcakes you will need -
- 120g of butter
- 300g caster sugar
- 2 medium sized eggs
- 250ml buttermilk
- 2 tablespoons red food colouring
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons bicarbonate of soda
- 1 tablespoon vinegar
- 250g plain flour
- 5 tablespoons best quality cocoa powder
- 1 teaspoon salt
To make the creamy vanilla icing you will need -
- 140g of butter
- 2 tablespoons of milk
- 280g of icing sugar
- 2 teaspoons of vanilla extract
- Decorations from Dr. Oetker.
Method -
- Preheat oven to 180 C / Gas mark 4. Line your muffin tin with cupcake cases.
- In a large bowl, mix the butter and sugar until light and fluffy. Add in the eggs, buttermilk, red food colouring and vanilla. Stir in the bicarb and vinegar. Combine the flour, cocoa powder and salt; stir into the mixture just until blended. Spoon the mixture into your cupcake cases, filling them halfway allowing for the mixture to rise.
- Bake for 25 minutes or until the tops of the cupcakes spring back when lightly pressed. Cool on a wire rack.
- For the icing beat the butter in a large bowl until soft. Fold in half the icing sugar and mix until smooth. Add in the rest of the icing sugar and the milk until the mixture is creamy and smooth.
- Add in the vanilla essence and spoon the icing mixture into a piping bag. Using a star shaped nozzle swirl on the icing in a spiral motion.
- I then added the sugared butterflies, wafer daisies and chocolate stars which are all decorations by Dr. Oetker.
These are such a delicious treat and I shall definitely be making them again, everyone loved them!
